A mediterranean style dish is generally high in omega-3 fats and high in anti-inflammatory foods and I love this dish for easy meal prep to have on hand for the week. This easy EASY dish, uses fresh ingredients, herbs (parsley) that has potent liver detoxifying properties, and the whole grain QUINOA (one of my absolute favorites) which is high in protein AND fiber. Have this meal for dinners, lunches, or small serving for snacking. Enjoy!
- 1 cup cherry tomatoes, washed and halved
- 1 avocado, chopped
- 1 cucumber, chopped
- 1/2 red onion, diced
- 2 cups cooked quinoa (optional to add more or less)
- 1 handful fresh parsley, chopped
- lemon olive oil vinaigrette (you can pre-make yours or find a freshly made dressing.. I love Braggs Vinaigrette for quick go-to)
DIRECTIONS: Add all ingredients to a large bowl and combine well. Store in the fridge for up to 5-7 days (great option for lunches, snacks or dinner all week).
