Curry Roasted Cauliflower
- 1 head cauliflower
- 1 tsp curry powder
- 1/4 tsp salt
- olive oil
- Pre heat oven to 375-400F. Chop cauliflower head into florets.
- Place on a large roasting pan lined with aluminum foil (saves time for cleanup).
- Drizzle with olive oil (about 1 Tbsp), salt, pepper to taste, and curry powder. Use your hands or shake your pan to make sure cauliflower is evenly coated.
- Roast in oven for 30 minutes (or until cauliflower is fork-tender).
