Parsnip Pancakes

Parsnip Pancakes

  • 2 Parsnips, roasted and pureed

  • 1 T cinnamon

  • 1 T coconut oil

  • 2 Eggs

  • 1 T coconut flour

  • 1 tsp Vanilla Extract

  • Sea Salt to taste

Directions:

  1. Gather all ingredients out on your kitchen counter.  Either roast your parsnips until fork tender (or I used parsnips leftover from dinner the night before). If parsnips are not yet pureed/mashed, add to a food processor or mash well in a large bowl.

  2. Add all ingredients to a large mixing bowl until well incorporated.

  3. Cook in a skillet on medium heat. Serves 4-6.
