Roasted "Buffalo-Sauced" Cauliflower

An easy, super yummy dish that EVERYONE will love (Yes, everyone). And my secret... I add Frank's Red Hot and I keep it to only TWO INGREDIENTS. This plant-based appetizer will be the all-star at your next get together (if you don't gobble it down yourself before you get there that is!) 

Cauliflower is an incredible nutrient-rich veggie it is one of our "cruciferous veggies" meaning it's got some real powers for detoxification processes in the liver and has been shown to be a powerful protectant against several types of cancers.  Cauliflower is high in fiber and low in calories making it a great food to help for weight loss/maintenance.  For people who have thyroid conditions, I especially love roasting cauliflower, because although raw cruciferous veggies should be limited with thyroid conditions, roasting them is perfectly fine (and highly nutritious!) Dig in and enjoy this EASY and DELICIOUS dish!

ROASTED BUFFALO-SAUCED CAULIFLOWER

INGREDIENTS:

  • 1 Head Cauliflower

  • Sea Salt

  • Franks Red Hot Sauce (or any hot sauce/buffalo sauce)

DIRECTIONS:

  1. PRE-HEAT oven to 350F.

  2. PREP. Wash cauliflower and chop into large florets.

  3. ROAST.  Set on a baking pan and add 1/4 tsp sea salt over your cauliflower florets. Roast for 30-40 minutes (until tender and pieces start browning).

  4. LET COOL.

  5. ADD HOTS. Add cauliflower to a large bowl and toss in 1/8 - 1/4 cup hot sauce. 

  6. ENJOY!
