Strawberry Coconut Smoothie

Strawberry Smoothies are always a top favorite and can be super easy especially when you use frozen fruit to give it a creamy cold texture! While it may not be strawberry season just yet, did you know that frozen berries actually might have more nutritional benefit than the fresh ones in stores (which may have been shipped from thousands of miles away (especially when out-of-season).  When berries are flash frozen, they are picked at their peak ripeness and frozen right off the fields.  This means that their antioxidants and polyphenolic compounds are preserved all the way until you blend or bake them at home. 

Berries are low in natural sugars, high in anti-oxidants, and contains anti-inflammatory compounds that research has shown to be helpful for those with rheumatoid and osteo-arthritis, macular degeneration, and inflammation in the digestive tract (including Chrons and Colitis).  These berries have been shown to help boost brain power, cognition, and memory.  Findings in a recent Harvard study found increased consumption of blueberries and strawberries had a slower rate of memory decline in older women. Add strawberries to blend into this smoothie for brain-boosting benefits!

INGREDIENTS:

  • 1 cup frozen strawberries

  • 1 frozen banana

  • 1 cup almond milk OR coconut water OR I used Silk's Coconut Milk

  • 1 handful spinach (washed)

  • 1-2 Tbsp unsweetened coconut flakes

DIRECTIONS:

  1. Using a high-powered blender, add all ingredients and blend smooth (~60-90 seconds).

  2. Serve with a sprinkle of coconut flakes or cacao nibs.
