6 Ingredient Red Curry Skillet Meal

It doesn’t need to be extravagant or overly complicated. A lot of my meals typically look like this with just a different veggie, starch, protein and spices/dressing. We become too over stimulated not just with what’s going on in our lives, but even with food - sometimes the basics are exactly what we need. Whole Foods. Fresh. A few spices/herbs #keepitsimple

INGREDIENTS

▪️ 1 whole zucchini, chopped⠀

▪️1/2 sweet potato, diced seal⠀

▪️few handfuls of kale⠀

▪️protein of choice - ground beef, turkey, chicken or tofu *preferably grass fed/organic if doing meat ⠀

▪️1-2 Tbsp red curry paste⠀

▪️1-2 TBSP (or a few shakes) of fish sauce ⠀

▪️1 TBSP minced garlic⠀

  • Add your sweet the a hot skillet first. You may need to add some oil to the pan to prevent from sticking. Stir for about 5 minutes until starting to soften (add a pan lid to speed up the cooking process)

  • Add meat to the skillet and start to stir around util starting to brown.

  • Mix in curry, garlic, fish sauce and add remaining ingredients.

  • Add remaining veggies/ taste and add any more curry or fish sauce for flavor.
