Beet Saute & Beet Quinoa Citrus Salad

Do you know the supreme benefits of beets? These ruby red root vegetables help to boost nitric oxide production which is what helps to pump blood throughout the body and helps to improve athletic performance.  Beets are a good source of electrolytes, folate, and iron and offers incredible anti-oxidant and anti-inflammatory benefits.  If you're feeling fatigued,tired, maybe you need help with proper blood circulation - beets can be a great food to include in your diet! This recipe is easy, delicious and will help you make a big impact on your current health and nutrition.

INGREDIENTS:

  • 1-2 cups Cooked Quinoa

  • 1-2 Large Beets

  • 1-2 oranges, squeezed

  • 2 cloves garlic, minced

  • 1-2 Tbsp (splash) balsamic or white vinegar

  • salt/pepper to taste

DIRECTIONS:

  1. Cut off the beet greens that stick out from the base of your beet heads. 

  2. Wash beets well and cut into very small pieces (imagine you are making home fries when you cut white potato). 

  3. Add 2 Tbsp coconut oil to a large saucepan. 

  4. Add diced beets to the pan and season with salt/pepper/garlic powder (or fresh garlic).

  5. Continue to cook and stir at medium-high heat for about 5-10 minutes. 

  6. When beets are soft (you can test this by piercing with a fork), you can drizzle 2 oranges and/or 1-2 Tbsp of balsamic vinegar (or white vinegar) to the dish. 

  7. Season with any additional salt/pepper.

Serve your sauteed beets as is OR create into a lunch/dinner/snack to store for tomorrow.  Combine cooked beets with 1-2 cups of cooked quinoa for a perfect meal (a perfect meal includes both a fiber rich food and protein - this has both!)
