Carrot Ginger Soup

Who loves a warm winter soup waiting for them when they get home? Umm meeeee (& You once you get this recipe!) It's Bengals Game time soon so I made this soup in honor of the Cincinnati Team where I have recently just moved to!

This is a colorful, vibrant soup but has some really kick from the spice of ginger-root.  It's so easy and very cheap to make with ONLY 5 ingredients! The carrots and sweet potatoes provide beta-carotene to improve our immune system and give some extra dose of Vitamin A and fiber.  The ginger helps to improve our digestive system and give some relief to any pain or inflammation in the body.   BEAUTIFUL, DELICIOUS & AMAZINGLY GOOD FOR YOU!

Ginger Carrot Soup

INGREDIENTS:

  • 2 cups chopped carrots

  • 1 sweet potato

  • 2" fresh ginger

  • 2-3 cups chicken or veggie broth

  • 1T sage

  • salt/pepper to taste

DIRECTIONS:

  1. ADD all ingredients to a large stock pot.

  2. BOIL & SIMMER. Bring to a boil then let simmer 20 minutes (or until carrots are soft).

  3. PUREE. Purée with an immersion blender or regular blender. 

  4. SERVE and STORE the rest in 16 oz. mason jars to take for lunch the next day! TIP: You can double or triple batch this recipe to freeze for next week too!
