Beef Chow FUN

Straightforward, easy, great meal prep & fun new flavors! Here’s the quick go to that tasted SOOO good tonight... let’s be honest I’ll be eating this for the next couple days as leftovers!!

INGREDIENTS

  • 1 lb sirloin steak sliced very thinly

  • 2 Tbsp coconut aminos (or soy sauce/tamari)

  • 1-2 Tbsp rice wine vinegar

  • (Let marinate while you prep the veggies)

  • 2 boxes chopped shiitake mushroom

  • 2 large zucchini sliced in ribbons (or add more!!)

  • 8 green onions, chopped

  • 3 cloves Garlic, minced

  • 1 inch Ginger, minced (or just get ginger paste or pre-chopped ginger)

  • **for those that need a starch this would be great with some white or brown rice

DIRECTIONS

  1. Add marinade meat to saucepan until cooked.

  2. Remove and place aside.

  3. Sauté garlic ginger & mushrooms 2 min.

  4. Add zucchini ribbons another 1 min.

  5. Add beef back in and add sauce on top (1/4c coconut aminos- or could do some soy sauce, 1 tsp sesame oil - i did a little more, salt/pepper/pinch of sugar or honey).

  6. Add sesame seeds to finish. .
