Skinny Chicken Soup

Fall is here and my crockpot has center stage on our counter space for the season!  A little cooler and rainy today so coming home to a warm house with cozy aromas of chicken soup cooking was the best! 

This comforting crockpot recipe has only 6 ingredients: shredded chicken, savory seasoned carrots, onions and celery and chicken broth which will provide you with fiber and protein (without the refined carb noodles) to fill you up and keep you satisfied in these cooler months!

  • 2 Chicken Breast

  • 3 Large Carrots, chopped

  • 3 Large Ribs Celery, chopped

  • 1 small yellow onion

  • 1 Tbsp Italian Herbs (dried)

  • 1 Qt chicken broth

Wash and chop carrots, celery and onion.  Add chicken breast to your crockpot followed by chopped vegetables, seasoning/herbs, and chicken broth. Set on low for 6-10 hours.  In last 30-60 minutes of cooking shred chicken and stir to combine broth and veggies.
